1 pound ground beef
1 packet taco seasoning
1 can (15 ounces) refried beans
1 can (10 ounces) diced tomatoes and green chilies, undrained
In a skillet, cook the ground beef over medium heat until browned. Drain off any excess grease.
Stir in the taco seasoning, refried beans, diced tomatoes and green chilies, and salsa. Cook for 5 minutes, stirring occasionally.
In a 9×13 inch baking dish, layer half of the tortilla strips.
Spread half of the beef mixture over the tortillas.
Sprinkle with half of the cheddar and Monterey Jack cheeses.
Repeat the layers with the remaining tortillas, beef mixture, and cheeses.
Cover the baking dish with foil.
Bake for 20 minutes.
Remove the foil and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
Let stand for 5 minutes before serving. Add your favorite toppings if desired.
Notes
For freezing, assemble the casserole but do not bake. Cover tightly with plastic wrap and then foil. Freeze for up to 3 months. Thaw in the refrigerator overnight and bake as directed, adding a few extra minutes to the covered baking time.
You can substitute ground turkey or chicken for the ground beef.
For a vegetarian option, use black beans or pinto beans instead of ground beef.
