  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar

  • 2 tablespoons shortening or coconut oil

Instructions

  1. Prepare the peanut butter filling: In a medium bowl, beat together the peanut butter, softened butter, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
  2. Assemble the crackers: Take one whole graham cracker sheet. Spread about 1 to 1.5 tablespoons of the peanut butter mixture evenly over the entire surface of the cracker.
  3. Top the peanut butter layer with a second whole graham cracker sheet, pressing gently to adhere. You now have a peanut butter sandwich.
