  • 2 cups cooked white rice (about 1 cup uncooked)
  • 2 cups fresh or frozen broccoli florets
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese, plus extra for topping
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed buttery crackers (like Ritz) for topping
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  3. If using fresh broccoli, add it to the skillet with 2 tablespoons of water. Cover and steam for 3-4 minutes until slightly tender. If using frozen broccoli, add it directly to the skillet.
  4. In a large bowl, whisk together the cream of chicken soup, cream of mushroom soup, milk, 1 cup of cheddar cheese, garlic powder, salt, and pepper until smooth. This is your homemade casserole sauce.
  5. Fold the cooked rice, steamed broccoli, and onion mixture into the cheese sauce until everything is evenly coated.
  6. Pour the mixture into the prepared baking dish. Sprinkle the remaining cheddar cheese evenly over the top.
  7. In a small bowl, toss the crushed crackers with the melted butter. Sprinkle the buttered crumbs over the cheese layer.
  8. Bake for 25 to 30 minutes, or until the casserole is bubbly around the edges and the topping is golden brown.
