Enjoy this moist blueberry bread with a sweet cream cheese swirl. It’s a perfect quick bread for brunch or a simple dessert.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup fresh blueberries
  • For the Cream Cheese Swirl:
  • 4 ounces cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Add the sour cream and mix until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Gently fold in the fresh blueberries.
  8. In a separate small bowl, beat together the softened cream cheese, ¼ cup sugar, egg yolk, and ½ teaspoon vanilla extract until smooth.
  9. Pour half of the blueberry batter into the prepared loaf pan. Dollop half of the cream cheese mixture over the batter. Swirl gently with a knife or skewer.
  10. Pour the remaining blueberry batter over the cream cheese layer. Dollop the remaining cream cheese mixture on top and swirl again.
  11. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, loosely tent with foil.
  12. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For a beautiful swirl, don’t overmix the cream cheese into the batter.
  • You can freeze cooled slices for up to 3 months. Wrap them tightly in plastic wrap and then in foil.
