  • 1 ½ cups granulated sugar
  • 3 ½ teaspoons baking powder

  • ½ cup unsalted butter, softened
  • 1 ½ cups milk
  • 3 large eggs

  • For Buttercream:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • Optional: Sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or one 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add softened butter and mix on low speed until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together milk, eggs, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until just combined. Do not overmix.
  6. If making a rainbow cake, divide the batter into bowls and tint each with a different food coloring.
  7. Pour batter into prepared pans. For rainbow layers, pour colors in alternating layers. For a sheet cake, spread evenly.
  8. Bake for 30-35 minutes for round pans, or 35-40 minutes for a sheet pan, or until a wooden skewer inserted into the center comes out clean.
  9. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  10. While cakes cool, prepare the buttercream. Beat softened butter until creamy. Gradually add powdered sugar, alternating with milk, until smooth and fluffy. Stir in vanilla extract.
  11. Once cakes are completely cool, frost with buttercream. Decorate with sprinkles or other desired toppings.
