Ingredients

Scale
  • 1 pound ground beef

  • 3/4 cup water
  • 1 (15 ounce) can refried beans, warmed
  • 1 (10 ounce) can diced tomatoes and green chilies, drained
  • 1 bag (13-15 ounce) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

  4. Spread the tortilla chips in a single layer on a large baking sheet.
  5. Spoon the refried beans evenly over the chips.
  6. Spoon the seasoned ground beef mixture over the beans.
  7. Sprinkle the diced tomatoes and green chilies over the beef.
  8. Top evenly with the shredded cheddar and Monterey Jack cheeses.
  9. Bake for 8-10 minutes, or until the cheese is melted and bubbly.
  10. Remove from oven and add your favorite toppings before serving immediately.

Notes

  • For best results, use sturdy tortilla chips that can hold up to the toppings.
  • You can prepare the seasoned beef mixture ahead of time and reheat it before assembling the nachos.
  • If you don’t have refried beans, you can use black beans or pinto beans, lightly mashed.
  • This recipe is easily adaptable to your favorite toppings.
  • Consider this a great alternative to meal planning for busy nights.
