Easy One-Pot Beef Goulash

A simple, hearty one-pot beef and macaroni dinner in a rich tomato sauce with cheesy comfort, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 8 ounces elbow macaroni
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the tomato sauce, diced tomatoes (with their juice), and beef broth.
  5. Season with salt, black pepper, paprika, garlic powder, and onion powder. Stir to combine.
  6. Bring the mixture to a boil, then add the elbow macaroni.
  7. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the macaroni is tender, stirring occasionally.
  8. Stir in the shredded cheddar cheese until melted and combined.
  9. Serve hot.

Notes

  • This dish is great for meal prep. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a spicier goulash, add a pinch of red pepper flakes with the other seasonings.
  • You can substitute ground turkey or ground chicken for the ground beef.
