Ingredients
Scale
1 cup mashed ripe bananas (about 2 medium)
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the mashed bananas, egg, and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Stir in the chocolate chips, if using.
Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a healthier option, you can substitute half of the all-purpose flour with whole wheat flour.
To make these vegan, use a flax egg (1 tablespoon flaxseed meal + 3 tablespoons water, let sit for 5 minutes) and ensure your chocolate chips are dairy-free.
These cookies freeze well. Store them in an airtight container in the freezer for up to 3 months.
For a gluten-free version, use a gluten-free all-purpose flour blend.
