Instructions

  1. Prepare the crust: Combine vanilla wafer crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill the crust for at least 15 minutes while you prepare the filling.
  2. Make the pudding layer: In a medium bowl, whisk together the instant vanilla pudding mix and 1 1/2 cups cold milk until thickened, about 2 minutes. Set aside.

  5. Chill: Cover the cheesecake loosely and refrigerate for at least 4 hours, or until firm. This chilling time is essential for structure.
  6. Prepare the topping: Before serving, whip the remaining 1 cup cold heavy cream with 1/4 cup powdered sugar and 1 teaspoon vanilla extract until stiff peaks form.
  7. Finish and serve: Spread the whipped topping over the chilled cheesecake. Arrange the remaining banana slices decoratively on top. Slice and serve immediately.
