  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the cod fillets dry with paper towels.
  3. In a shallow dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Drizzle olive oil over the cod fillets and place them in the panko mixture, pressing gently to coat both sides.
  5. Place the coated cod fillets on the prepared baking sheet.
  6. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork, and the crust is golden brown. The internal temperature should reach 145°F (63°C).
