- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- 0.5 tsp garlic powder
- 0.5 tsp salt
- 0.25 tsp black pepper
- 4 oz feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 0.5 tsp honey
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels.
- In a small bowl, mix 1 tbsp olive oil, oregano, garlic powder, salt, and pepper.
- Rub the mixture all over the chicken breasts.
- Place the chicken in a baking dish.
- Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- While the chicken bakes, prepare the vinaigrette. In a small bowl, whisk together 2 tbsp olive oil, lemon juice, Dijon mustard, and honey.
- Once the chicken is cooked, remove it from the oven.
- Sprinkle the crumbled feta cheese over the chicken.
- Return the dish to the oven for 5 minutes, or until the feta is slightly softened.
- Drizzle the vinaigrette over the chicken and top with fresh parsley before serving.
