You will make tender, flavorful baked chicken breast using simple garlic and herb seasoning. This easy oven bake recipe is perfect for weeknight dinners and results in juicy chicken every time.

  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth or water

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  2. In a small bowl, mix together the minced garlic, oregano, thyme, salt, and pepper.
  3. Pat the chicken breasts dry with paper towels. This step helps the seasoning stick and promotes better browning.
  4. Place the chicken breasts in the prepared baking dish. Drizzle the olive oil evenly over the chicken.
  5. Rub the garlic herb mixture thoroughly onto all sides of each chicken breast.
  6. Pour the chicken broth or water into the bottom of the baking dish around the chicken, not over the top. This creates steam to keep the chicken moist.
  7. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer. Cooking time depends on the thickness of the breasts.
  8. Remove the dish from the oven. Let the chicken rest in the dish for 5 minutes before slicing or serving. This allows the juices to redistribute, giving you melt in your mouth chicken breast.

Notes

  • For thicker chicken breasts, pound them to an even thickness (about 3/4 inch) before seasoning. This promotes even cooking and prevents the thinner ends from drying out.
  • If you prefer a richer flavor, you can substitute 1 tablespoon of the olive oil with 1 tablespoon of melted butter.
