You deserve warm, comforting sweets that taste great without much fuss. Make these easy baked apple fritters in your oven for a lighter take on the classic treat. They are tender inside, slightly crisp outside, and covered in a sweet cinnamon glaze.

Ingredients

Scale
  • 2 large apples (like Honeycrisp or Granny Smith), peeled, cored, and diced small
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners.
  2. In a medium bowl, combine the diced apples with 1 tablespoon of the granulated sugar and 1/4 teaspoon of the cinnamon. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, remaining 1/4 teaspoon cinnamon, nutmeg, and salt.
  4. In a separate small bowl, whisk together the remaining 1/2 cup granulated sugar, egg, 1/2 cup milk, melted butter, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  6. Gently fold the sugared apple pieces into the batter.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18 to 22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  9. While the fritters bake, prepare the glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons milk, and 1/2 teaspoon cinnamon until smooth. Add more milk, a drop at a time, if the glaze is too thick.
  10. Let the fritters cool in the pan for 5 minutes before transferring them to a wire rack.
  11. Drizzle the warm fritters generously with the cinnamon sugar glaze. Serve warm for the best texture.

Notes

  • For crispier edges, you can lightly spray the tops of the batter with cooking spray before baking.
  • You can substitute half of the all-purpose flour with whole wheat flour for a slightly heartier fritter.
  • If you prefer a stronger apple flavor, toss the diced apples in 1 teaspoon of lemon juice before adding them to the batter.
