You can make this hearty, cheesy casserole that tastes just like your favorite bacon cheeseburger. It is a simple, satisfying bake perfect for a quick weeknight dinner.

Ingredients

  • 1.5 lb ground beef
  • 1 cup chopped cooked bacon
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup beef broth
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon Dijon mustard
  • 1 cup shredded cheddar cheese, divided
  • 0.5 cup shredded Swiss cheese
  • 0.25 cup pickle relish (optional)
  • 1 cup crushed potato chips or breadcrumbs (for topping, omit for low-carb)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned. Drain off any excess grease.
  3. Stir in the salt, pepper, and garlic powder into the beef mixture.
  4. In a separate medium bowl, whisk together the beef broth, cream of mushroom soup, milk, and Dijon mustard until smooth.
  5. Pour the soup mixture over the cooked beef and onion in the skillet. Stir to combine.
  6. Remove the skillet from the heat. Stir in the cooked bacon, half of the cheddar cheese, the Swiss cheese, and the pickle relish if you are using it.
  7. Pour the entire mixture into your prepared baking dish.
  8. If using the topping, mix the crushed potato chips or breadcrumbs with the remaining half of the cheddar cheese. Sprinkle this mixture evenly over the top of the casserole.
  9. Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is golden brown.
  10. Let the casserole rest for 5 minutes before you serve it.

Notes

  • For a low-carb or keto version, skip the potato chip or breadcrumb topping. Instead, top with an extra half cup of cheddar cheese during the last 10 minutes of baking.
  • You can cook the ground beef and bacon in a slow cooker on low for 3-4 hours before mixing with the other ingredients and baking.
  • Use your favorite cheese blend, like Monterey Jack or Colby, in place of Swiss cheese for a different flavor profile.
