1 pound ground beef
1 pound bacon, cooked and crumbled
1 onion, chopped
2 cloves garlic, minced
1 (24 ounce) jar marinara sauce
1 (15 ounce) can diced tomatoes, undrained
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
12 lasagna noodles
1 (15 ounce) container ricotta cheese
1 egg, beaten
1/4 cup chopped fresh parsley
3 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef and onion over medium-high heat until the beef is browned and the onion is tender. Drain off any excess grease. Stir in the garlic and cook for 1 minute more.
Add the marinara sauce, diced tomatoes, Italian seasoning, salt, and pepper to the skillet. Bring to a simmer, then reduce heat and cook for 10 minutes, stirring occasionally. Stir in half of the crumbled bacon.
Cook lasagna noodles according to package directions. Drain and rinse with cold water.
In a medium bowl, combine the ricotta cheese, beaten egg, and parsley. Mix well.
Spread 1 cup of the meat sauce in the bottom of a 9×13 inch baking dish.
Arrange 3 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles. Sprinkle with 1 cup of mozzarella cheese and 1/2 cup of cheddar cheese.
Repeat the layers: 1 cup meat sauce, 3 noodles, remaining ricotta mixture, 1 cup mozzarella, 1/2 cup cheddar.
Top with the remaining 1 cup meat sauce, remaining 3 noodles, remaining 1 cup mozzarella, and remaining 1/2 cup cheddar cheese. Sprinkle the remaining crumbled bacon over the top.
Cover the baking dish with foil. Bake for 25 minutes.
Remove the foil and bake for another 20-25 minutes, or until the cheese is melted and bubbly and the lasagna is heated through. Let stand for 10 minutes before serving.
Notes
This dish is great for meal prep. You can assemble it ahead of time and bake when ready.
To reheat, cover with foil and bake at 350°F (175°C) until heated through.
For a cheeseburger flavor, you can add dill pickle slices to the layers.
