1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon

2 cups grated zucchini (about 2 medium)
½ cup unsweetened applesauce
½ cup vegetable oil
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup chopped walnuts or pecans (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
Add the grated zucchini, applesauce, vegetable oil, granulated sugar, eggs, and vanilla extract to the dry ingredients.
Stir until just combined. Do not overmix.
Fold in the chopped nuts, if using.
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
