  • 1 gallon apple juice
  • 4 cups granulated sugar
  • 1 cup brown sugar
  • 1 (750 ml) bottle of 190-proof grain alcohol (or 151-proof)
  • 2 cinnamon sticks
  • 4 whole star anise
  • 1 vanilla bean, split

Instructions

  1. In a large pot, combine apple cider, apple juice, granulated sugar, and brown sugar.
  2. Heat the mixture over medium heat, stirring until the sugars dissolve.
  3. Add cinnamon sticks, star anise, and the split vanilla bean.
  4. Bring the mixture to a simmer, then reduce heat and let it steep for 30 minutes.
  5. Remove from heat and let it cool completely.
  6. Strain the mixture to remove the spices.
  7. Carefully add the grain alcohol to the cooled apple mixture. Stir well.
  8. Bottle the moonshine in clean jars, ensuring a tight seal.
  9. Allow the moonshine to age for at least two weeks for flavors to meld.

  • For a smoother flavor, you can adjust the amount of sugar to your preference.
  • If using 151-proof alcohol, the final proof will be lower.
  • Always handle grain alcohol with care and in a well-ventilated area.
