- 1 gallon apple cider
- 1 gallon apple juice
- 4 cups granulated sugar
- 1 cup brown sugar
- 1 (750 ml) bottle of 190-proof grain alcohol (or 151-proof)
- 2 cinnamon sticks
- 4 whole star anise
- 1 vanilla bean, split
- In a large pot, combine apple cider, apple juice, granulated sugar, and brown sugar.
- Heat the mixture over medium heat, stirring until the sugars dissolve.
- Add cinnamon sticks, star anise, and the split vanilla bean.
- Bring the mixture to a simmer, then reduce heat and let it steep for 30 minutes.
- Remove from heat and let it cool completely.
- Strain the mixture to remove the spices.
- Carefully add the grain alcohol to the cooled apple mixture. Stir well.
- Bottle the moonshine in clean jars, ensuring a tight seal.
- Allow the moonshine to age for at least two weeks for flavors to meld.
