Bake a cinnamon-swirled quick bread loaded with apples. This recipe features chunky apple layers and a sweet cinnamon glaze, perfect for fall baking and gifting.

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup buttermilk
  • 2 cups chopped peeled apples (about 2 medium apples)
  • 1/2 cup chopped pecans (optional)
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the chopped apples and pecans (if using).
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the bread cools, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and cinnamon until smooth. Add more milk if needed to reach desired consistency.
  11. Drizzle the glaze over the cooled bread.
