Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In a separate, smaller bowl, whisk together the milk, egg, vanilla extract, and melted butter until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
  5. Fold in the finely chopped apples until they are evenly distributed throughout the batter.
  6. Drop rounded tablespoons of batter onto the prepared baking sheet, leaving about 2 inches between each bite. They will puff slightly while baking.
  7. Bake for 12 to 15 minutes, or until the edges are lightly golden brown and a toothpick inserted comes out clean.
  8. While the bites cool slightly, prepare the glaze. Whisk the powdered sugar, vanilla extract, and 2 tablespoons of milk in a small bowl until smooth. Add the remaining milk, one teaspoon at a time, until you reach a thick but pourable consistency.
  9. Dip or drizzle the warm apple fritter bites generously with the cinnamon sugar glaze.
