Ingredients
Scale
2 medium apples, peeled, cored, and finely chopped
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup milk
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 tablespoon melted butter
For the Glaze: 1 cup powdered sugar
For the Glaze: 2-3 tablespoons milk
For the Glaze: 1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt.
In a separate, smaller bowl, whisk together the milk, egg, vanilla extract, and melted butter until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
Fold in the finely chopped apples until they are evenly distributed throughout the batter.
Drop rounded tablespoons of batter onto the prepared baking sheet, leaving about 2 inches between each bite. They will puff slightly while baking.
Bake for 12 to 15 minutes, or until the edges are lightly golden brown and a toothpick inserted comes out clean.
While the bites cool slightly, prepare the glaze. Whisk the powdered sugar, vanilla extract, and 2 tablespoons of milk in a small bowl until smooth. Add the remaining milk, one teaspoon at a time, until you reach a thick but pourable consistency.
Dip or drizzle the warm apple fritter bites generously with the cinnamon sugar glaze.
Serve warm for the best experience.
Notes
For a crispier exterior similar to fried fritters, you can pan-fry these bites in about 1/2 inch of vegetable oil over medium heat until golden brown on all sides, then drain on paper towels before glazing.
Use firm, slightly tart apples like Granny Smith for the best texture and flavor contrast against the sweet glaze.
You can make these ahead and store them in an airtight container at room temperature for up to two days. Reheat briefly in the microwave if desired.
