1 cup diced apple

Instructions
Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the eggs, applesauce, maple syrup, milk, melted coconut oil, and vanilla extract.
