  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar

  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup sour cream
  • For the Topping:
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan.
  2. In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce heat and simmer until the cider has reduced by half, about 10-15 minutes. Let it cool slightly.
  3. In a large bowl, cream together the softened butter and 1 3/4 cups granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and the reduced apple cider.
  5. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Pour the batter into the prepared Bundt pan and spread evenly.
  8. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the cake is cooling, prepare the topping. In a small bowl, combine the melted butter, 1 cup granulated sugar, and 2 teaspoons cinnamon. Mix well.
  11. Once the cake is completely cool, brush the melted butter and cinnamon-sugar mixture generously over the entire cake.

  • This cake can be made a day ahead and stored at room temperature, covered.
  • For an extra burst of apple flavor, you can add 1/2 cup of finely chopped apples to the batter.
