Ingredients
Scale
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
1 cup unsweetened applesauce
1/2 cup buttermilk
1/2 cup chopped walnuts or raisins (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch bundt pan or a 9×5 inch loaf pan.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
In a small bowl, whisk together the applesauce and buttermilk.
Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
If using, fold in the chopped walnuts or raisins.
Pour the batter into the prepared pan and spread evenly.
Bake for 45-55 minutes for a bundt cake, or 55-65 minutes for a loaf cake, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
Notes
For an extra moist cake, ensure your applesauce is unsweetened.
You can dust the cooled cake with powdered sugar or drizzle with a simple glaze made from powdered sugar and a little milk.
This cake pairs wonderfully with a cup of coffee or tea, making it a perfect comfort food dessert.
Consider this recipe as a great base for meal planning, offering a delightful treat without complex steps.
