A simple, one-pot American goulash recipe with ground beef and macaroni in a savory tomato sauce. This comforting dish is perfect for busy weeknights and feeds a crowd.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried oregano
  • 1 pound elbow macaroni
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the crushed tomatoes and beef broth. Season with salt, pepper, paprika, and oregano. Bring the mixture to a simmer.
  4. Stir in the elbow macaroni. Cover the pot and reduce heat to low. Cook for 15-20 minutes, or until the macaroni is tender, stirring occasionally to prevent sticking.
  5. If desired, stir in the shredded cheddar cheese until melted.
  6. Serve hot.

Notes

  • This goulash reheats well and is great for meal prep.
  • For a spicier version, add a pinch of red pepper flakes.
  • You can substitute ground turkey or ground chicken for the ground beef.
  • Consider this a great alternative to meal planning services.
