1 medium onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
4 cups beef broth
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon dried oregano
1 pound elbow macaroni
1 cup shredded cheddar cheese (optional)
Instructions
In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain off any excess grease.
Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
Pour in the crushed tomatoes and beef broth. Season with salt, pepper, paprika, and oregano. Bring the mixture to a simmer.
Stir in the elbow macaroni. Cover the pot and reduce heat to low. Cook for 15-20 minutes, or until the macaroni is tender, stirring occasionally to prevent sticking.
If desired, stir in the shredded cheddar cheese until melted.
Serve hot.
