You can make these simple Almond Joy Cookies using just four ingredients. They capture the classic chocolate, coconut, and almond candy bar flavor in a soft, chewy cookie form. This recipe is quick and perfect for satisfying a sweet craving.

  • 1 (14 ounce) can sweetened condensed milk
  • 2 cups sweetened flaked coconut
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped almonds, plus extra for topping

Instructions

  1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the sweetened condensed milk and the flaked coconut. Mix well until the coconut is fully coated.
  3. Stir in the chocolate chips and the chopped almonds.
  4. Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about two inches apart.
  5. Press a few extra chopped almonds onto the top of each cookie mound.
  6. Bake for 10 to 12 minutes, or until the edges are lightly golden brown. Watch them closely as they can brown fast.
  7. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • For a richer chocolate flavor, you can use dark chocolate chips instead of semi-sweet.
  • If you want a chewier texture, press the dough balls down slightly before baking.
  • Store cooled cookies in an airtight container at room temperature for up to one week.
