  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Wash the zucchini and slice them very thinly, about 1/16 inch thick. A mandoline slicer works best for uniform thinness.
  2. Place the zucchini slices on several layers of paper towels. Cover with more paper towels and press firmly to remove as much moisture as possible. This step is key for crispiness.
  3. In a medium bowl, toss the dried zucchini slices with olive oil until lightly coated.
  4. In a small bowl, mix together the Parmesan cheese, garlic powder, salt, and pepper.
  5. Sprinkle the seasoning mixture over the zucchini slices and toss gently until evenly coated.
  6. Preheat your air fryer to 375°F (190°C).
  7. Arrange the zucchini slices in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
  8. Air fry for 8 to 12 minutes, shaking the basket halfway through the cooking time. Check frequently after 8 minutes, as cooking time varies by air fryer model.
  9. The chips are done when they are golden brown and feel crisp to the touch.
  10. Remove from the air fryer and let them cool slightly before serving. They will crisp up more as they cool.

Notes

  • For extra crunch, you can substitute 1 tablespoon of the Parmesan cheese with 1 tablespoon of panko breadcrumbs.
  • If you do not have a mandoline, slice the zucchini as thinly as you can manage with a sharp knife.
  • These are best eaten immediately for maximum crunch.
