  • 1.5 lbs cod fillets
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 large egg, beaten
  • 2 tablespoons olive oil

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels.
  3. In a shallow dish, combine panko breadcrumbs, salt, pepper, and garlic powder.
  4. Dip each cod fillet into the beaten egg, ensuring it’s fully coated.
  5. Press the egg-coated cod into the panko mixture, coating both sides.
  6. Lightly brush the coated cod fillets with olive oil.
  7. Place the cod in the air fryer basket in a single layer, ensuring not to overcrowd. You may need to cook in batches.
  8. Air fry for 8-12 minutes, flipping halfway through, until the cod is cooked through and the crust is golden brown and crispy. The internal temperature should reach 145°F (63°C).
